Clean Banana Muffins (for adults and kiddos!)

Hello friends!  It's been pretty crazy over in our house lately getting ready for someone's 1st birthday!!  Mother Nature also decided to look at the calender and realized she was late to the party (although I didn't mind) and decided to dump a little bit of snow, a ton of wind, and frigid temps all in one day.  Tis the season I guess.  Fun fact:  I currently don't have a winter coat that fits (because I didn't need one last year thanks to my internal space heater) so I guess I'll be hitting the stores (aka my computer and amazon) to buy one! 

Real quick, this past weekend I attended Super Saturday (Four times a year, thousands of Team Beachbody Coaches come together from cities all around the country and Canada for a training-focused Team meeting.)  This one was especially awesome because it was my first one and I got to learn from the best of the best in the BB world (my coach is numero uno in the company for the 2nd year in a row and the Dream Team is the number 1 team!  Sooo something these ladies are doing is right!!)  I was super nervous because I didn't know anyone but in true Kamie form I met someone in the elevator and we became fast friends.  I also facebooked a couple of new coaches that were attending and decided to meet up.  That's the nice thing about being a coach and working for beachbody, everyone I met was so incredibly nice and positive and all have 1 goal in mind; to better themselves and to help others!  Was an awesome experience to get out of my comfort zone! 

So back to the task at hand.. FOOD!  What do you do when you have a snotty sick child who wont eat anything but cheese and cherrios and have 3 black bananas hanging by a thread on your fruit stand?!  Clean banana muffins of course!  No butter, processed sugar, or anything like that.  I hate buying bananas to just throw them away and I didn't feel like making banana bread soooo muffins it was!  (Although here is an EXCELLENT recipe that is not clean by any means but if you know someone who just had a baby or surgery and want to bring them something THIS IS IT!! I may or may not have eaten an ENTIRE loaf in my last month of pregnancy. SO GOOD!)  Anyhoo I was brainstorming what I could feed ellie since she isn't feeling good and figured I would try and throw a bunch of fruit (apple and banana) in muffin form!  She gobbled it up immediately followed by a glass of milk and a nap... So I would say they were a hit!  

A few things about this... I loosely followed a recipe and kind of created my own.  I also ran out of muffin cups and my muffin tin has seen better days so I used my silicone muffin pan which I am pretty sure is 2 muffins in 1.  This recipe called for 12...I made 6 massive ones.  (Think costco muffins but not THAT big...or filled with crap).  I also used what I had on hand.  I personally like walnuts or pecans in my banana muffins but Dave doesn't and I was making them for Ellie so I left them out, but you could definitely add them in as well as chocolate chips!   




Clean Banana Muffins (adapted from this recipe)

Ingredients 

1 large egg 
1 1/2 cup (3 large) very ripe bananas and 1/2 yellow banana*
1/2 cup applesauce, unsweetened 
1/4 cup maple syrup or raw honey (I used maple syrup)
3 tbsp olive oil, extra virgin 
1 tsp pure vanilla extract 
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder, aluminum free 
1/2 tsp baking soda 
1/4 tsp salt 
1 1/3 cups flour (or whole wheat flour)

add ins if making for adults -- chocolate chips, walnuts or pecans

Directions 
1. Preheat oven to 375 degrees F and spray non­stick 12 muffin tin with cooking spray (or like I did use a silicone pan) Set aside. 
2. In a large mixing bowl, lightly beat the egg. Add the ripe bananas and mash well. Add remaining ingredients, except flour, and whisk to combine.  Chop the yellow banana into small chunks and add in with the flour and gently stir until well incorporated. Do not over mix otherwise muffins will be tough. 
3. Fill each tin almost full with batter and bake for 22 minutes (I had to bake mine for 35 mins because they were so big) or until a toothpick inserted in the center comes out clean. Let muffins cool for about 5 minutes and then transfer to a cooling rack and let cool completely.  Trust me they don't taste as good right out of the oven and you will burn your mouth..not that I did this or anything.

*This is just a personal taste, I like to add in chopped up pieces of banana that you can see when you eat it.  You can leave this out if you prefer*
