SNOOOOOOWWWWWW!!! (and clean french toast)

I always wondered why people always go for bread and milk when they hear SNOW! Wouldn't you want to stock up on non-perishable items -- like wine?  If I were stocking I would grab essentials -- wine, coffee, milk (for creamer and mac n cheese duh), and eggs.  I guess it's people just trying to gain control of something uncontrollable (umm weather).  Luckily I have a stocked fridge and pantry from my grocery run monday (yay!) so I wont need to fight the crowds.  And my liquor cabinet is stocked with wine because a certain little girls 1st bday is coming up and we need to CELEBRATE!!! 

All that aside I never witnessed this CRAZY RUN FOR BREAD AND MILK until we had the remnants of a hurricane hit a couple years back.  I went to the store to grab something for dinner and I am not kidding the bananas and bread were GONE!! There were three sad bananas left and I almost bought them because I felt bad then I got a grip on reality realized fruit doesn't have feelings.  It was insane...like IT WAS JUST RAINING!!!!  Here is proof: 






So what to make when you have all this milk and bread and it only snows a little bit or a lot and your stuck inside.  CLEAN FRENCH TOAST!!! 
  
I love french toast, but not the calories and sugar crash that come with it.  Soo I made a clean recipe up that fits in for the 21 day fix!! (I will say this uses 2 yellow containers so I usually make this on the weekends when I eat a big breakfast so I am not missing the carbs later in the day)

Clean French Toast

Here ya go snow bunnies for 1 person:

2 pieces of whole grain sprouted bread (Ezkiel makes a good one and I found some at Aldi's by me recently...SCORE)
1 egg
2 Tbsp almond milk; cashew milk; non fat milk 
1/2 to 1 tsp cinnamon (optional but its so good!) 
toppings -- bananas (if they arent sold out!); strawberries; pure maple syrup; blueberry syrup; etc 

Directions:
Heat a dab of coconut oil (or grass fed butter) in a skillet or griddle on medium heat.  
Whisk your egg, milk, and cinnamon together in a bowl big enough to fit your bread.
Dip your bread on both sides; making sure to coat it really well with the egg mixture. 
Place bread in skillet and cook for about 3 mins a side (I like mine kind of crispy) 
Place french toast on plate and top with your favorite toppings!!  (Mine is pure maple syrup; my husband like cinnamon sugar sprinkled on top)
Enjoy!  These keep well in the fridge, just heat up in the toaster on the lowest setting and you are good to go!  



(fix terms: 1/2 red, 2 yellow, if you add fruit on top 1/2 or 1 purple, maple syrup is 1/2 spoon)
